Soy Sauce Marinated Eggs – Easy Comfort Food for Busy People

Everyone has a favorite food they seek out for comfort. Some like sweets and some like fast foods. If I’m not craving any of those, I go for some classic Asian comfort food, the Soy Sauce Marinated Eggs. My schedule is always packed, so this recipe is great for people who are busy or meal prep.
For those like me who are always super busy, this recipe is very easy to make and can be made in bigger batches anytime. Traditionally made as a topping for Japanese ramen, many now just eat it with rice and a sweeter soy sauce or as a starter.

They are always available and just as easy to cook with since they have their own cooking vessel in shells, so you don’t have to fuss too much with them.


This recipe uses only three ingredients: soy sauce, sugar, and eggs; for extra flavor, I added freshly grated ginger
The steps to make these soy sauce marinated eggs are pretty basic:


1) Whisk together 1 cup of light soy sauce with 2/3 cup water in a medium bowl; add 6 lightly cooked large eggs; let sit at room temperature 30 minutes–overnight (the longer they sit, the more flavorful they become).


2) Drain the eggs well in a colander over another bowl; reserve the marinade for basting.


3) Serve over jasmine rice or enjoy with a piece of toast

I overcooked my eggs a bit, but they can be cooked to your liking.

When storing, I recommend using a tall glass jar and keeping it in the fridge for when you want to serve it.
