“Quick & Easy Miso Soup made with Chicken Stock”

Miso soup, a traditional Japanese dish made with miso paste and several other ingredients, is not only incredibly tasty but also packed with nutrients. One of the key ingredients in miso soup is tofu, which is an excellent source of protein and contains essential amino acids. Additionally, miso itself is a fermented superfood that is rich in minerals and probiotics.

If I am under the weather I always make this soup and it makes me feel better instantly. I have changed the traditional recipe up a little bit by using chicken stock because it is sweeter and my stomach can handle it better. Sometimes the traditional dashi soups gives me a little bit a stomach trouble, so I find the chicken stock a great alternative.

To make this delicious and healthy soup, you will need the following ingredients:

  • 4 cups of Chicken Bone broth
  • 1 tablespoon of miso paste
  • 1/2 cup of cubed tofu
  • Sliced green onion
  • Wakame seaweed
  • HonDashi
  • Salt
  • White Pepper
  1. First, heat the Chicken Bone broth and cracked white pepper in a pot over medium-high heat until it begins to boil. This way the pepper has ample time to enhance the broth.
  2. It is time to add the miso paste. Use a whisk to dissolve the miso paste in the soup, making sure there are no lumps.
  3. Than add the wakame seaweed, do not add too much as they will rehydrate. If too much is added it will soak up too much broth as well as turn the soup green
  4. Then, reduce the heat to low and add in the cubed tofu. Allow the tofu to simmer for a few minutes until it is warmed through, tender to the touch
  5. After that, add HonDashi and salt to taste.
  6. Finally, add in the sliced green onions to give it some vibrant color and a final layer of flavor.

This miso soup recipe is not only easy to make, but it’s also highly customizable. If you prefer a lighter soup, use vegetable broth instead of chicken broth. Try soaking dried Shiitake mushrooms overnight and using the water from the soaked mushrooms as a broth to give it an even deeper and earthy flavour. Add more water and slice the mushrooms up and add them to the soup if you want a heartier version. Regardless of how you choose to customize it, miso soup is a deliciously healthy and comforting meal that is perfect for any cold day.
