Feta Cheese and Almond Salad – The Perfect Summer Salad
During the recent warm weather, we’ve been getting the thought of standing in front of a hot stove is not appealing at all. So I have been looking for some lighter meals to prepare, one of which is the almond feta cheese salad showcased below. It’s a perfect example of how you can make a delicious and healthful meal without spending your day in the kitchen.
Feta Cheese and Almond Salad—yummy! The sweet crunchiness of the almonds contrasts perfectly with the sharp tangy flavor of feta cheese where it melts into savory goodness. The variety of veggies adds color as well as healthy vitamins and minerals to round out the meal. For time saved I went to my local Whole Foods Market and picked up one of their spring mixes for this dish. For an added bonus I added in some tangerines with the skin off, you can also bring in your favorite seasonal fruits as well.
Ingredients
- 2 cups of (sliced) almonds
- 1 cup of feta cheese (crumbled) (Or cheese of choice)
- 3 tablespoons of lemon juice
- 1 teaspoon of honey/maple syrup/agave nectar {to taste}
- Toppings (your choice)
- 2-3 hand fulls of your favorite greens
- 1 whole tangerine with the skin peeled off
- Olive oil
- Place almonds and/or your choice of nuts on a baking sheet and toast under the broiler until lightly browned. If an oven is available, you can also pan toast them. When cooled down use a knife to break apart into pieces.
- Grab a plate or bowl and place the greens inside
- Add crumbled feta cheese or your cheese of choice
- Drizzle olive oil over salad ingredients then pour lemon juice or sweetener over the salad.
- Sprinkle toasted smashed almonds over the top of the salad.
- Alternatively, fresh seasonal fruits can be added to enhance the taste, I tend to like tangerines to give it some pop with the cheese and vegetables.
