Egg Drop Soup with Shredded Ginger Garnish – Quick and Easy Soup for Your Meals

Are you looking for a quick and easy soup to add variety to your meals? Look no further than an Egg Drop Soup!

This simple yet delicious soup is the perfect solution for busy individuals who want a satisfying and nutritious meal in minutes. I grow up in the Chinese restaurant business, and Egg Drop Soup has always been a fan favorite. So, I will base this on our family’s recipe for this soup. Sometimes when we got a little too busy in the restaurant, we would whip up a batch for the staff to keep them energized and focused.

We like to drink this soup with to usual scallion garnish, but we want to take it up a notch by adding a shredded ginger garnish. Adding shredded ginger enhances the soup’s flavor and provides numerous health benefits. If you are not feeling good or the weather is too muggy this summer, ginger can help alleviate nausea symptoms and aid digestion. While the egg gives you extra protein and essential nutrients, the ginger adds a unique and refreshing twist to the soup.

There are 2 options for this soup regarding the egg; depending on your dietary needs or preferences, you can use whole eggs or egg whites. Using whole eggs will give the soup a richer and creamier texture, while using egg whites will result in a lighter and healthier version. You are free to choose whichever option suits your taste and dietary requirements. For the sake of this recipe, I will stick to using whole eggs.

Here is what you will need to make Egg Drop Soup with Shredded Ginger Garnish:

Ingredients:

  • 4 cups of chicken or vegetable broth
  • 2-3 green onions, thinly sliced
  • 2-inch piece of fresh, thinly sliced ginger
  • 3 large eggs (Separate yolks if only using egg white)
  • 1 tablespoon soy sauce (Optional)
  • 3 tablespoons of Corn starch
  • 1/3 cup of water
  • Salt and pepper to taste
  • Sesame oil (optional)

Instructions:

  1. In a medium-sized pot, bring the chicken or vegetable broth to a simmer over medium heat.

2. While the soup is coming to medium heat, simmer thinly slice the scallions and ginger

3. Gently Beat the 3 eggs in a separate bowl and set it aside

4. Mix the cornstarch with water in a small bowl to make a slurry. This slurry will help thicken the soup.

5. Add a tablespoon of the cornstarch mixture to the broth, and stir until the soup is slightly thick. During this step, season your broth to taste.

6. Gently add the beaten eggs in a circular motion into the broth; make sure the broth is not coming to a boil; this will ensure the egg stays soft.

7. Allow the eggs to cook for 30 seconds to 1 minute until they form silky ribbons.

8. Lightly move the soup with a spoon to move the egg around

9. Serve soup in a bowl and garnish with scallions, ginger, and a drizzle of sesame oil, if desired.

10. Enjoy

I hope you find the above recipe enticing and decide to give it a try. This soup is excellent for anyone looking for a simple and nourishing meal. The thicker soup fills the stomach more and can help you eat less by having a bowl before your meal. The ginger garnish adds a refreshing and aromatic touch to the soup, while the optional sesame oil provides a nutty flavor.

Happy Cooking,
