Strawberry Yogurt Parfait with Sweet Granola – Perfect Breakfast and Snack

Hope everyone is having a great start to the Summer, it’s been a very busy few months and I am happy to be posting again. As much as I like staying busy, sometimes it gets too hectic where you are unable to get enough time for yourself. I hope to get into the habit of scheduling out time for myself and not wait until I burn out.

As the summer season begins I look forward to eating more cold snacks in particular parfaits. It is a snack that keeps you full unit your next meal, I crave it when the weather gets too muggy. During very warm weather the thought of turning the stove on the cook is the last thing on my mind. I tend to gravitate towards the fridge for a snack that can keep me full and is most importantly cold. I love when this season brings fresh strawberries to the markets, I am obsessed and funny enough only crave them during this time of the year. I think it has to do with the sweet and fresh taste during the warm weather. You buy them any other time of the year it taste different, so I encourage you all to eat anything in season for the best taste.

I love yogurts, but because I am a little lactose I have to be careful which ones I buy. Sometimes some work out and I get a minor reaction, other times it gets me very sick for a few days. I know there are tons of alternatives, but they just do not taste the same. After some trial and error on my part, I was fortune enough to find one that taste good and did not make me sick. I highly recommend La Fermiere Yogurt. They have a variety of flavors, but Orange Blossom Honey is my absolute favorite. Their yogurts are thicker in consistency and not at all watery.

I’m pretty sure I get this from my mom, she loves granola, the lady eats it by the handfuls. While I am not as enthusiastic as my mom is, I share the love of it in my parfaits as it adds texture to the yogurt and strawberry. I’m a little picky as to which one I eat, I love it lightly sweetened, with the usual granola, some flax, and pumpkin seeds.

I highly recommend Nature’s Path Organic: Pumpkin Seed Plus Flax Granola, but you can get it and the other varieties at your local market.

  • Option of any fresh fruits for garnish, I choose a sweet Strawberry
