Sweet Tomato & Eggs Recipe served with White Rice
I never use to like tomatoes, I would avoid them like the plague. I felt that they were too squishy and slimy to be appealing, but that all changed when I discovered the delicious tomato egg dish. The combination of sweet and tangy flavors from fresh tomatoes mixed with fluffy eggs is truly a match made in culinary heaven. If you’re like me, a skeptic of tomato’s texture but appreciate their nutritional benefits, the Sweet Tomato & Eggs Recipe served with White Rice is worth a try.
Not only is this dish packed with flavor, it also contains healthy ingredients proven to lower blood glucose and lipids levels. In fact, the mineral-rich whole grain white rice is an excellent source of essential nutrients and fiber that aid in digestion while also keeping you full. Ingredients:
- 3-4 ripe tomatoes, chopped wedges
- 4-6 eggs, lightly beaten
- Minced green onions
- Sugar
- Salt and pepper to taste
- Soup or water
To get started all you need a pan:
1. First, start off by washing and dicing a medium-sized tomato.
2. Then, crack 2-4 eggs and salt into a bowl and wisk them together.
3. Heat up some oil in a non-stick pan and slowly start to stir fry the eggs and place them in a seperate plate.
4. Oil back up the pan used and add diced tomato to the same pan and stir-fry for about 2-3 minutes until it becomes soft and juicy. (If it gets a little dry add some soup or water to moisten)
5. Add some sugar and a pinch of salt to the tomatoes and stir-fry for an additional minute.
6. Finally, add the cooked eggs back into the pan with the tomatoes and stir everything together.
7. Serve hot over a bed of fluffy white rice or rice on the side with your favorite garnish or additional seasoning to taste.
