Flavorful Ginger & Scallion Oil Recipe for Poultry and More

Have you ever struggled to find a sauce that complements your perfectly cooked chicken?

Look no further than this delicious ginger and scallion oil!

My father brought this oil recipe from his hometown in China, becoming a staple in our household. As children, we often hear stories about when he and his friends would eat street food after work, and this sauce was always used in the dishes, so it brings back a lot of nostalgia. He often used it to enhance the taste of chicken, seafood, and vegetables.

Although commonly used a pair with poultry such as chicken, duck, or quail, this sauce’s versatility knows no bounds. I sometimes use it as a dipping sauce for dumplings or toss it in my stir fry.

The best part about this recipe is how simple it is to make! All you need is ginger, scallions, oil, and salt. The duo of ginger and scallion enhances the overall flavor and masks unpleasant odors. You can add a touch of sesame oil for a more enhanced flavor. I usually do not use a lot of sesame oil in my dishes because it overpowers the other flavor and is all you can smell and taste.

Here is what you need:

  • 1 cup of oil (vegetable, canola, or peanut work best)
  • 1 cup of ginger, and diced (a food processor can be used)
  • 1 cup of diced scallions
  • Salt
  • Pepper
  • MSG (for Unami optional) (Pinch)
  • Clean Glass jar

Some notes before you start cooking.

  • I recommend using vegetable oil because it has less flavor than other oils, allowing the ginger and scallion to shine!
  • When choosing ginger, feel them to ensure they are firm and have smooth skin.
  • When choosing scallions, look for bright green tops and solid white bases. (I LOVE scallions, so I tend to put more in. Don’t be shy about it!)
  • There is no harm in adding a pinch msg for some added umami flavor, but that is optional. As always, be mindful of the amount you use.

Directions:

  1. Heat the oil in a skillet on medium heat until it starts to shimmer.
  2. Place the diced ginger and scallions into a shallow plate or bowl
  3. Put the seasonings on top
  4. Slowly pour the oil over the ginger and scallion mixture.
  5. Stir well and let it cool
  6. Test taste and add more seasonings if necessary.
  7. Serve and enjoy!
  8. Store it in the fridge for up to a week.

This can be stored, but I recommend enjoying it fresh with your favorite meal. It gets more flavorful as it sits, but the ginger can become overpowering after a few days, sometimes even a little more salter.
