Ginger and Scallion Chicken Soup – Perfect for colds
If you’re feeling under the weather, a warm and comforting soup is just what you need. And what better soup to help ease your symptoms than ginger and scallion chicken soup?
I usually do not have an appetite when I’m under the weather. So soups are always my go-to meal because it’s easy to eat and don’t take much time to prepare. In addition to having no appetite, I usually have no strength or energy to do much. So having something easy to prepare is a must for me when sick.
This healthy and delicious soup contains beneficial ingredients to help fight off cold symptoms and relieve congestion. It’s also quick and easy to make! Ginger contains potent anti-inflammatory compounds that can help improve cold and flu symptoms and help break up congestion in the chest. It also possesses powerful antibacterial properties that help fight bacteria that can cause respiratory infections. The combo of ginger, scallions, and chicken stock is also beneficial in fighting off infections and helping to clear mucus from the airways.
When I get sick, it’s usually a congested type of aliment, so in addition to medicine, I rely on the spiciness of ginger to help clear up my breathing. I find that it helps to break up mucus and move it out through the body.
When my siblings and I were younger, my mom always made this soup whenever one of us was sick. It’s perfect for sick days because you can prep and make it when you want to eat it. I always use chicken bone broth as a base for all my soup because of its natural “sweetness.” It adds extra flavor and helps get the different nutrients from the other ingredients into the broth. I usually also add a handful of freshly grated ginger and some chopped scallions to enhance the soup’s flavor and boost vitamin C to help fight those nasty cold symptoms. The green onions also help boost the flavor and give the soup a lovely color.
Ginger and Scallion Chicken Soup Recipe
Ingredients:
- Ginger
- Scallions
- Chicken Breast Bones (Roughly three pieces)
- Water
- Salt
- White Pepper (Keep soup clear versus regular black pepper will darken it)
- MSG (a Pinch of Umami) Optional
Instructions:
- Rinse chicken bones with clean cold water Tip: This helps to rinse away any dirt or impurities that may have accumulated on the bones.
- Place clean chicken bones into a pot and fill with cold water until it covers the top of all the bones; turn the temp to high.
- Wait for it to come to a first boil, use this time to skim off the foamy part of the water as it rises to the top, then remove the scum that forms at the top of the water with a spoon and discard it. Tip: Bring the temp to medium
- Please wait until it comes to a second boil, then lower it to a simmer and allow the soup to clear. Tip: Continue to skim the soup with a skimmer to help the soup clear up
- Once it is a clear soup, you can take the chicken bones out
- Cut the ginger and scallions finely and place them into your soup bowl
- Pour hot soup right into your soup bowl
- On top of (extra) garnish, put your seasonings to your taste
The soup will have the spiciness of ginger and white pepper and the taste of scallions. I hope this helps you feel better when you are sick! If you are scared, this is not enough; add some white rice to make it more filling.
