Rinse chicken bones with clean cold water Tip: This helps to rinse away any dirt or impurities that may have accumulated on the bones.
Place clean chicken bones into a pot and fill with cold water until it covers the top of all the bones; turn the temp to high.
Wait for it to come to a first boil, use this time to skim off the foamy part of the water as it rises to the top, then remove the scum that forms at the top of the water with a spoon and discard it. Tip: Bring the temp to medium
Please wait until it comes to a second boil, then lower it to a simmer and allow the soup to clear. Tip: Continue to skim the soup with a skimmer to help the soup clear up
Once it is a clear soup, you can take the chicken bones out
Cut the ginger and scallions finely and place them into your soup bowl
Pour hot soup right into your soup bowl
On top of (extra) garnish, put your seasonings to your taste
