Pork Rib and Tofu Soup

Ingredients:

  • 2 pounds of pork ribs, cut into 1-inch pieces
  • 1 block of firm tofu, cut into small cubes
  • 8 cups of chicken bone broth
  • Sea Salt or Kosher Salt
  • White Pepper, to taste
  • MSG is optional and can be added for extra umami flavor
  • Scallions, chopped, for garnish

Instructions:

  1. In a large pot, bring the chicken bone broth to a boil.
  2. Add the pork rib pieces to the boiling broth and reduce the heat to medium-low.
  3. Let the pork ribs simmer for 1 to 2 hours, and skim the scum as it floats up for a clearer soup. Cook the Pork Ribs until they are tender and falling off the bone.
  4. Add the cubed tofu to the pot and let it cook for 10-15 minutes or until heated.
  5. Season the soup with sea salt or kosher salt and white Pepper; add MSG to taste if used.
  6. Serve the soup hot, garnished with chopped scallions on top.
