Spicy Garlic and Chili Sauce for Noodles and more; The Perfect Condiment for a Quick, Easy Meal Recipe

Growing up, I was raised by my grandmother, who LOVED noodles; it did not matter how it came. Whether it was soup, stirfry, or saucy goodness, noodles were always on the menu. I usually opt for a wider noodle like udon or wide noodle for this dish because their thick, chewy texture soaks up the spicy sauce perfectly. But please choose the type of noodle you prefer, as the sauce will pair well with any variety. Now, let’s dive into the recipe itself.

Ingredients:

  • 2 tablespoons ginger, minced
  • 4 cloves garlic, minced
  • 3 Thai chilis, finely chopped (adjust to your desired level of spiciness)
  • 3 tablespoons hoisin sauce
  • 3 tablespoons soy sauce
  • 2 scallions, thinly sliced
  • 1 teaspoon dry pepper flakes
  • 1 teaspoon pepper powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • A pinch of MSG Umami (optional)
  • 1/4 cup vegetable oil

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the minced ginger, garlic, and finely chopped Thai chilis to the skillet. Sauté the ingredients for about 2-3 minutes, until they become fragrant and slightly browned.
  3. Add the hoisin sauce, soy sauce, scallions, dry pepper flakes, pepper powder, salt, and pepper to the skillet.
  4. Stir everything together until well combined, and let the mixture simmer for another 2 minutes to allow the flavors to meld together.

Store the leftover sauce in a clean and dry glass jar in the refrigerator for the leftovers. The sauce can be stored for about a week, allowing you to enjoy its spicy goodness for multiple meals. I love to make this sauce when I am craving noodles smothered in spicy sauce that packs a punch of flavor. But the benefits of this sauce go beyond just its delicious taste. You can prep this sauce in advance and have it ready to go for a quick and easy meal. If you want to add more heat, increase the amount of Thai chilis and let it cook for a little longer to infuse the spice. If you want a little more flavor add a tsp more of soy sauce and hoisin sauce to the mixture to enhance the umami profile.
