Preheat your oven to 375°F (190°C) to ensure it’s nice and hot when it’s time to bake the brie.
Gently slice the top rind off the wheel of brie cheese, exposing the creamy center. I used a small cast iron pan.
Place the brie cheese on a baking sheet or dish, ensuring it is in the center.
Spread a generous layer of lemon curd over the top of the brie cheese.
Sprinkle a handful of toasted sliced almonds over the curd, allowing them to nestle into the sticky sweetness.
Bake the brie in the oven for 10-12 minutes or until the cheese is gooey. As the brie cheese bakes, they create a rich and velvety pure magic texture.
While the brie is baking, take this opportunity to prepare your toasted pita bread. Slice the pita bread into triangles or bite-sized pieces, then pop them into a toaster or medium-heat pan until golden brown and crispy. I placed mine in the oven. The toasted pita bread is perfect for scooping up the warm, gooey brie and lemon curd mixture.
Once the brie is done baking, remove it from the oven and let it cool for a few minutes.
