Bring a pot of water/broth to boil and cook the ramen noodles according to package instructions.
While the noodles are cooking, dice up the shiitake mushrooms, chop the scallions, and pick a hot sauce.
Once the noodles are cooked, add the seasonings and mix well.
Add in the sliced shiitake mushrooms and let it simmer for a couple of minutes until they become tender and release their flavors into the broth.
Serve noodles in a bowl, and crack an egg immediately into the hot broth, allowing it to poach for a few minutes until the whites are set but the yolk is still runny.
Then generously topping them with chopped scallions and hot sauce
Drizzle a light amount of sesame oil over the dressed ramen for added depth of flavor (optional).
